Weeks/Months/seasons cooking companion (sequel eight on the continuous order) is devoted for organic foods. However, we've not been selecting recipes especially recommended or advertised as organic especialities. Here's, as usual, instead some regular easy prepared foods, with the organic ingredients used. To better emphasize the importance of this topic, we're even writing on italics and mentioning separately (most) compounds that could(/can) be prepared from organic stuffs (ie whether there was such alternative on vegetables/of other ingredients available on the MSW). And like noticeable, we've even been reading some words of these inspiring trends on the organic revolutions on global food market. (Or, 'visions for sustainable societies' like seems written of that and the renewable energies on above text.)
Basically anything can and should be cultivated with environmentally sustainable farming, it also saves the soils from increase of stressing chemicals and fertilizers. Other typical characteristics the organic production is mentioned of are that they usually represent small scale farming and production methods merely intended for local foods markets (but that may also have been changing somewhat). (On this we're also not forgetting to mention - but only briefly - that the organic veggies often are more tasty and hold their 'real' flavours if compared to the 'regularly' produced alternative – one needs just take bite of the cucumbers grown at greenhouses and some raised on completely ecological method, actually the best representative example I am aware of. However, also matters much how fresh the fruits (in particular) are kept and unfortunately that's probably more difficult without using preservation component - which also tends to spoil(/have effect) on the real flavour...So, like appears logical and reasonable, the more fresh, better the taste...but some fruits actually taste better when soften a bit, as some exception for the preceding...)
As well, and concerning the above presented example, sometimes the term 'organic farming' is used only with meaning of exclused fossil fertilizers and chemicals from the foods production process (but fx the cultivation methods are not counted/valued in between, so it's not necessary considered to matter whether that cucumber may have been grown on the real earths/soils or rooted for the 'turf box' - and most usually anything on markets is produced by greenhouses, not the least since it, on the northern latitudes especially, guarantees faster growth and favorable stable conditions, probably.) More typically noticed aspect, in the organic farming is using natural insects prevention, fx like for the annihilation of harmful pests is preferred using their natural predators - and not the chemicals. And, fx, maybe it's also more common using natural pollinators for the plants grown, instead of some artificial methods...however, I've not found any information/research from if it been found having any effect on the taste of the end-product, actually.)
Further more, sometimes – concerning packed foods especially – it's not always easy to find out what is the actual level of organics used in the product (But usually it's mentioned, and occasionally by percentages, by some average the used organic parts should consist at least some 51 per cent of the total). Further yet, it can be noticed that on some cases the actual difference between the organic/non-organic isn't always that big, particularly in cases when the stuffs compared were produced on formerly heavily stressed soil (the sustainable agricultures only recently having become favored methods) or if they are from the fields cultivated by otherways sustainable ways (like reasonably growing the different plants on the field on different years, and land sometimes laid to rest a period).
But I really don't need too much argumenting or convincing from the good benefits of organic agricultures – Actually my common sense tells that they're much better for the natures, soils (reducing erosion, fx) and for the common consumer, as well. Life-long experience (as the latter mentioned) from the usual big agri-businesses and global food markets suffices to assure me on this aspect. (So I fx tend to buy Fair trade fruits/veggies, and often they are organically grown - not always, though.). Globally thinking, the problem from hunger still appears among the largest single questions on our times and one can't except the organic agricultures straightforward solve that, fx. But in the long run, this actually appears as progressive thinking, and as well it's healthier choices for the natures and for the consumers themselves, because it's also - at least on some part - a choice for not backing un-balanced foods market on the world. Other typical features for organic agricultures also are more direct sales for consumers, the greater self-sufficiency on production...etc, but (if wish) see the more of it from elsewhere and compare the views by yourself.
All in all, it's of course recommendable using one's own reasoning and comparing logic when shopping and every ingredient necessarily isn't even available as organic alternative. As well, what of course matters somewhat, is that one still has to be prepared paying some extra if wish favor the organic compounds. But it's a good start to select some for the shopping basket - and by principle fx, I almost without exception take the organic grown flours if available (recently I've also noticed that they've nowadays in the MSW even started providing bio-degradable bags on the fruits section of market...). Celery-Potato Soup
Ingredients: Handful of [Organic] celery (ca 500 g, it said) , 1 [Organic] onion , 150 g butter, 300 g [Organic] potato, 2 dl broth (/or, water), [Organic] parshley , salt, pepper
Wash the vegetables and chop celery for pieces, peel onion and potatoes. Place about half the butter on kettle and fry on small heat the onions and celery for some 1o min. After that add potato sliced, water and let be for about an hour. Finally, add spice and smash the soup. Pour on pre-heated bowl, stir within the rest of butter, (can add any favored herbs too , if wish).

...next, like the name says 'farce', but its tasty even if (my) actual preparations of this always don't turn out quite successes...
'Les Farcis Petits' ('a little' modified recipe...)
Ingredients: Tomatos, Squash, Onions, Aubergines, (large) green/red Peppers [all Organic], left-overs from yesterdays [Organic] minced meats, chopped steaks, whatever, [Organic] red wine, [Organic] garlic, grated (Parmesan?-) cheese, olive oil, [Organic] (white) bread , salt, pepper
Slice off the tops of the vegetables (aubergines halved), Scoop put insiders from them; Then, cook in the pan (about ½ hour) the meats, vegetable flesh, onions(chopped) and the red wine. Lastly, stir for the mixture crushed garlics, spices, grated cheese, (few eggs, if wish), and the bread in teared small pieces. The vegetables are filled with sauce, pour few tbs of oil within, place the 'hat' over each stuffed pieces. 200 C, ½ hour.

Wok'n'Mock'n'Chicken
Ingredients: ca 300 g chicken slices/pieces, couple [Organic] carrots , 1 [Organic] pepper , 1 [Organic] leek, chili, some oil, 1 [Organic] orange , 3 tbl [Organic] soya-sauce , black pepper (grind), salt

The Mushroom salad
Ingredients: ca 200 g mushrooms, 1 (sour) [Organic ] apple , olive oil, balsamico (white), ½ tsp salt, black pepper (a bit), (Parmesan) cheese, [Organic] sesame/sunflower seeds, [Organic] salads (few sorts of) ; Also [Organic] pasta can be offered alongside if wish.
Salad; Wash the mushrooms and slice them after having dried well. Remove insides of the apples and stir both together with the liquid compounds, and spices. From the separate bowl are then offered salads with grated cheese and fried seeds added over them.
...And alongside few yoghurt-dressings; Alt. NO 1.(Herb dressing): [Organic] 1 egg (well-baked), 1 [Organic] onion , some [Organic] parshley (or some other herb you prefer, I noticed mint suitable choice...), (natural) yoghurt, 2 tbs (frech) cream, salt, pepper – mix together chopped onions, egg and the youghurt/cream. Add spicings. ; Alt. NO 2. (Avocado dressing); 1 ripe avocado, 1 [Organic] lemon, (natural) yoghurt, 1 bunch [Organic] chives, salt, pepper - Slice half the avocado and coop the vegetable flesh out, also peel the cover for small parts. Smash the vegetable flesh and mix it with lemon juice, peeled parts, yoghurt. Lastly chop the chives and add spices within.
